To prepare scrambled eggs is simple. Just crack the eggs, season them and scramble them. However, if you want perfect scrambled eggs, you need to add more milk. Everyone can learn to make perfect scrambled eggs.
Milk for the eggs
Just add a little milk to the eggs. This will give your scrambled eggs a more uniform appearance, a soft white and a perfectly cooked yolk. The steam will serve to make the cooking process more gentle and controlled.
How milk affects scrambled eggs
The moment the milk comes into contact with the heated pan, some of the heat is absorbed by the liquid. This evaporates and creates a moister environment around the egg. The steam makes the egg white and yolk cook more evenly. Milk contains water, protein and natural sugars. These form microdroplets in small quantities on the surface of the pan.
The milk improves the texture and appearance. The whites stay whole, shiny and have no burnt spots. The yolks heat up gradually and retain their creamy consistency thanks to the milk. This simple trick will ensure that the whites are not too dry and the yolks are not overcooked.

It’s not just milk that makes perfect scrambled eggs. Patience is also key. It’s a simple dish, but you should never make scrambled eggs in a hurry. It only takes a few extra minutes of your time to make perfect creamy and juicy eggs.
What’s key:
- A pan with a non-stick surface.
- Heat-resistant silicone spatula.
- Room temperature eggs.
What ingredients you’ll need
- Eggs.
- Butter: it is better suited for scrambled eggs than oil.
- Milk, cream. If you don’t have any, at least add water.
- Salt, pepper.
At the end of cooking, you can season the eggs with herbs, ideally fresh. Some people also like to add grated cheese. Personally, however, I prefer eggs with just salt and pepper.
Mark Bittman’s trick
Most of us prepare scrambled eggs over a medium flame. Mark cooks his eggs slowly and at a low temperature. I’ve found this to be a great practice. Cooking at a low temperature means you have more control over the process and can more easily prevent overcooking. The texture of the eggs will be much better as a result.
However, you have to take into account that cooking the eggs on a low heat will take about 30 minutes. It is therefore a version suitable for when you have the time. Such an ideal breakfast for the weekend. Personally, though, I sometimes crave scrambled eggs even when I don’t have that much time to prepare them. That’s why I choose a medium flame at such times and prepare the eggs faster.
What to watch out for
Eggs should always be sufficiently cooked. Undercooked eggs pose a risk of salmonella. People with weakened immunity should be especially careful. Personally, I also eat uncooked eggs, for example in tartare, but this does not mean that there is no risk.
