I remember my childhood with my grandmother. There was a stoneware pot on her kitchen counter with beet kvass in it. I didn’t like it and my grandmother convinced me it was the best thing for my health. I used to let her talk in one ear and out the other. It wasn’t until years later that I found out she was right.
What is fermented beet juice
Beet kvass, or fermented beet juice, is a beverage made by fermenting beets. Nowadays, the drink is recognized as a functional food with health benefits. Nowadays, manufacturers offer a ready-to-drink beverage. They even improve its recipe with additional ingredients. However, you can still prepare the yeast yourself at home.
Benefits of beet kvass
Beetroot contains a dark crimson pigment that belongs to a class of compounds called betalains. It also contains nitrates. It has been shown that substances in beetroot can support the anti-inflammatory and detoxification pathways of the liver. Beets and their juice are also a good source of vitamin C, magnesium, folic acid, potassium and iron. In addition, homemade beet kvass also contains Lactobacillus bacteria. These are probiotics beneficial for the gut.
How to make beet kvass
Beet kvass is made from beets, water and salt. Sometimes it is enriched with garlic, bay leaves or new spices. The timing of the process is key. The yeast is not produced immediately. When you mix the ingredients, fermentation begins. Initially, the beetroot adds colour and flavour to the brine. But over time, chemical changes occur. These then give not only a specific aroma but also a distinctive character to the drink.
During fermentation, sugars are converted into lactic acid. This is responsible for the sour taste and characteristics typical of pickled foods. The longer it is fermented, the more intense the flavour.

If you leave beetroot to ferment for only a short time, the drink will have a mild taste and be unripe. It is necessary to let the beet work for several days, sometimes even two weeks. It also depends on the ambient temperature. Beetroot ferments faster in a warmer environment. However, in this case it is necessary to check the beet more often. Personally, I recommend letting the beet work for at least a week. After a while, however, you will be able to see for yourself what the best time is.

Is it for everyone?
Unfortunately. People with illness or a tendency to form kidney stones should be cautious. For them, this drink may not be suitable due to its natural composition and salt content. Caution is also advised for people with digestive problems.

Most people drink beet kvass in the morning on an empty stomach. However, this is not a strict rule. It can also be drunk during the day. You can drink it before meals or even during the day.
